60 g Galaxy - 7 day dry hop

Starter from Brewdog Punk IPA

Whirlfloc tablet - 10 mins boil

Yeast starter made from the dregs of a Brewdog Punk IPA. Allowed to start for 3 days before pitching in the cooled wort. This beer is designed to be a very strong, fruity, hoppy double IPA. Dry hopped for 1 week in the secondary fermenter with Galaxy hops and boiled extra long for lots of bitterness. 110 g priming sugar used for low-mid carbonation.
I feel like we hit the nail on the head with this one. The colour is right, the incredibly bitter hops are offset by the sweetness of the strong alcohol, and the fruitiness comes through very powerfully. Brilliant beer I would definitely make again. Only thing is it's a bit cloudy - some of the cold-break from the wort chilling made its way into the fermenter, but nevermind :)
